The dough is enriched with duck fat making a fluffy, light tortilla which is unlike any tortilla in Aotearoa. We don't pretend to make authentic tacos here. In fact we don't use any Mexican ingredients in our dishes, leaning more towards flavours of Taiwan, Southern BBQ & classic English pub food. Making our own tortillas is a huge effort by our team and we believe these tortillas are what set our food apart. They aren't just a vessel for our meats and salsas, they are the main event!
